Is the field Monthly
Demand located in the Inventory Master screen populated for some calculated
source? How does it get populated? Does the value in that field affect
recommended purchase quantities in the Suggested PO process?

1) Yes, the Monthly Inventory Demand can be recalculated. Follow to the Purchasing Utilities (Orders/Purchasing/Utilities menu), tab #6.
2) Yes, it is used a projected consumption to create purchase orders ahead of time. Follow to the Purchasing Utilities (Orders/Purchasing/Utilities menu), tab #7. If you do not input dates at the top, the calculations will be done based on today's "in stock" and "committed" quantities. However, if you set the End Date to some point in the future, the projected consumption will be added based on demand multiplied by number of months of supply.
